Peanut Butter Jelly Oats🍯🍓

Let’s face it, there is never a bad time for a peanut butter jelly. At least not in my house. 🙅

I grew up always preferring a 90% peanut butter to 10% jelly. I am an addict 😝❤️ So I decided to combine my true love for peanut butter and with my love of oats for a delicious mouthwatering bowl of goodness.

What you’ll need:
🍯2/3 cup oats
🍓1/2 cup almond or cashew milk
🍯1/2 cup water
Microwave that for 1:30 mins. Then stir and nuke another minute.
Then add:
🍓3 T egg whites and some cinnamon.
Stir and microwave about 30-40 seconds. ***Then add 1/2 scoop Pescience snickerdoodle whey (or any of your favorite protein powder)
***Can omit if you prefer plain oats***
Place raspberries in a small bowl and microwave about 30-40 seconds. Mash to make a “jelly”. Top oats and swirl with peanut butter and you got yourself heaven in a bowl. Thank me later😘

Peanut Butter Half Baked Review

So let me just start off by saying this wasn’t the easiest thing ever. It has taken me months to wrap my head around eating a WHOLE pint of real ice cream. I have had the froyo and greek yogurt kinds before but the health nut inside held me back. Let me just say, I was surely missing out!

Yeah, I could have easily gotten used to just always having frozen yogurt but would that really be a healthy mindset? Never allowing myself to indulge in a real treat because my body was craving it?
You think “eating clean” and watching everything you eat is going to make you super healthy and live forever? What if you lived forever but didn’t enjoy those days? You don’t have to live like that. Treat yourself. Fight for your happiness. Embrace every single day because you truly don’t know what could happen. I would much rather live a life full of happy memorable moments than a long, unfulfilled life full of regrets.

Now lets get down to this flavor… Peanut Butter Half Baked.

I had several reasons for choosing this flavor:
1. I have had the regular half baked and it has become a favorite.
2. This is a limited edition flavor
3. Peanut Butter. Chocolate. Cookie Dough. All in one pint… Yes, yes, hell yes.

When I first opened the lid, a little brownie chunk was waiting on top. I instantly got a whiff of peanut butter and chocolate just like a Reese’s cup. I started salivating….
The base is both peanut butter and chocolate ice cream. It is loaded with chunks of peanut butter cookie dough. Just imagine your favorite peanut butter cookies in cold, doughy chunks. There are also fudgy brownies just like the original half baked. I know right, too good to be true!

I would highly recommend tracking down this flavor before its gone! If you are like me, you are one with peanut butter. ❤

Needless to say, I felt very satisfied after the whole thing. Not guilt, more of a powerful, liberating feeling. I am strong and I will not be afraid of the numbers listed on the side. I woke up the next morning and I was perfectly fine. I did not gain weight nor was I bloated. I had normal hunger cues and went downstairs to make myself a nice breakfast. No exercise or restriction was used to “compensate”. Those are two behaviors proven to create an unhealthy lifestyle both physically and mentally. Instead, I choose to treat myself to ice cream and be happy 🙂

Chia Pudding

Ever wanted a healthy on-the-go breakfast and didn’t want to stop at some fast food restaurant? Happens sometimes, right? That’s why I love chia pudding!
Chia seeds are loaded with nutrients that can have important benefits for your body and brain. Not only does it provide you with a lot of fiber, they have some protein, omega-3 fatty acids along with many nutrients and antioxidants that make it a “superfood”.

The cool thing these little seeds do is EXPAND when you combine them with liquid. They GROW!

This is a super easy recipe to prepare the night before to have breakfast ready to go by morning.

•3 T chia seeds
•1/2 cup greek yogurt
•1/2 cup almond or cashew milk
•1/2 tsp cinnamon
•2 pkts sweetener (I use stevia)
•Fruit of choice and additional toppings

Combine the greek yogurt with the milk and mix well. Then add chia seeds, cinnamon, and sweetener and stir. Put in a mason jar or container and refrigerate overnight. It may look really soupy but it’s supposed to be, they do their magic while you sleep☺️

In the morning, add layers of fruit and enjoy! I personally loved the sweet crunch of granola on top, it just perfected it 👌

Spinach Lasagna

Nothing tastes better than a home made meal. Yeah, you could opt for the frozen meals and fast food meals but what are you missing from that? Love and quality. Exactly the two things packed in this lasagna along with all da cheese❤️

This is a pretty simply recipe! These are some of the items I used for it

Ingredients you’ll need:
🔸9 lasagna noodles (oven ready)
🔸2 beaten large eggs
🔸16 oz (2 cups cottage cheese)
🔸3-4 cups mozzarella cheese
🔸1/4 cup parmesan cheese
🔸1 24 oz jar of your favorite marinara sauce
🔸1 pkg frozen chopped spinach (thawed and separated)
🔸Optional Italian seasoning and garlic
Preheat oven to 350 F.
In a large bowl, combine eggs, cottage cheese, 2 cups mozzarella, parmesan, spinach, and seasonings.

Spread 1 cup sauce in a 13X9 inch baking pan and place 3 lasagna noodles.

Then add half the cottage cheese mixture on the noodles. Repeat with second layer and top with last set of noodles. Top the last layer with remaining sauce and as much cheese as your heart desires… In other words, don’t skimp, the heart wants what it wants ❤️

Bake 45 minutes and let stand 5-10 minutes before serving.

Cinnamon Apple Pie Panini

So I needed something good for a preworkout meal that wasn’t too filling but enough to give me the carbs and fuel I needed to lift💪

I whipped up the perfect sweet tooth satisfying treat!

What you’ll need:
🍎2 slices cinnamon raisin bread (I used Ezekiel)
🍎About 2-3 T brown sugar cinnamon cream cheese
🍎Thinly sliced apple (honeycrisp work amazing since they are super sweet!)
🍎Snickerdoodle Protein fluff:
1/3 cup greek yogurt
2 T Pescience Snickerdoodle Whey

Spread the cream cheese on one half and later with the apple slices. Put the fluff on the other half and TADA! You can panini press it for a toasty sandwich but I preferred it just the way it was❤️

**Side note: anytime you engage in any exercise, you need to fuel your body with carbs before hand! Or else you may feel weak and fatigue way faster into your workout. Without the energy, your body would target your energy from your muscles and can cause muscle breakdown instead. After, you MUST fuel up with protein and carbs for muscle growth💪

Roasted Acorn Squash

I recently have expanded my squash horizons. I have tried yellow, green, spaghetti, butternut… But not acorn. I spotted it when out shopping with my dad and after hearing many things about it, decided to just buy it, cook it up and give it my own review. ☺️

Acorn squash is more nutrient dense than most types of summer squash. It’s full of vitamins and minerals- especially vitamin C which helps  prevent against heart disease, cancer, hypertension, and osteoarthritis. This squash also contains vitamins A, B-6, niacin, folate, and thiamine.
The flesh is soft, mellow, and slightly sweet that pairs well with spices such as nutmeg and cinnamon. Oh, and you know me, what isn’t good with peanut butter? 🙊🍯
What to do:
  • Preheat oven to 400 F.
  • Cut squash into 1/2-1 inch thick slices.
  • Remove any seeds and strings in the center.
  • Toss slices with cinnamon (optional: sweetener or brown sugar)
  • Spray both sides with coconut oil.
  • Place on greased baking sheet & bake for 20 minutes.
  • Flip the rings over and bake another 5-10 minutes.

**Friendly reminder: don’t eat the skin…. You could try, but I don’t think you would feel too well later.**

Don’t let numbers control you.

Numbers. Tiny fragments of measurement that we let control how we live our lives every day. What would it take for all of that to change? How far are we willing to go to achieve what we think is right?

What you need to know is that numbers are not something we need to be living our every breathing moment on.🙅
I will tell you that I have learned over the years that numbers are inconsistent. They change all the time. No matter what or how, they evolve. Just like us. Do we stay 5 years old forever? No, we grow and become someone new as the years go on. Doesn’t mean it’s a bad thing, that’s just how life was supposed to happen. I can’t imagine how boring it would be if every single day was the same.

You are NOT the number of:

Calories you ate
The miles you’ve run
What appears on the scale
The size of your jeans
The followers you have
The friends you have
The grades you make
The money you earn
All of these things don’t add up to the greatness in you. You are a soul that was given a shell to carry you throughout your life and to let you do amazing things. No words or measurements can ever amount to YOU.
Some ways to change your thinking:
💜Count your blessings, not calories

💙Run because it makes you feel good, not to be the best

💚Remember that weight is your relationship with gravity and it is always going to change. Always.
Scales are for fishies anyways 🐠

💛Jeans suck anyways, leggings for life✌️

❤️Social media isn’t REAL life, followers come and go, but the ones that matter will stay forever

💜Friends do the same, a true friend will be there for you no matter what happens. If people can’t see the greatness in you, they aren’t worth your time

💙Grades are important, but they aren’t who you are. They don’t measure how smart you are and doesn’t mean you won’t get better. Persist.👊

💚Some of the happiest people I know aren’t rich. Make the most with what you have and be grateful for having a roof over your head, food to nourish your body and clothes to wear everyday.

I hope you all take a step back today and realize the things you have and truly appreciate it. You are worth it.

Breakfast Nana Split🍌

Bananas are one of the essentials in my house when it comes to groceries. Whenever we are out of bananas, it gets real and I know I need to make a trip to the store ASAP!

I was feeling creative and decided to make my own breakfast banana split.
It is very simple and fast to make too!
All you need is a cup of greek yogurt, a ripe banana, and the toppings your heart desires!

I chose:
💜Fresh blueberries
💜Sliced almonds
💜Rolled oats
💜Cinnamon (kind of a necessity for me)
💜Peanut butter

After it was all prepared, I stuck it in the freezer for about 10 minutes to make the everything super cold and I HIGHLY recommend it! It makes it more a “dessert style” treat and decadent ❤️
