Pumpkin Banana Baked Oatmeal

Combine:
•1/2 cup oats
•1/2 cup water
Microwave for 1:30 mins.
Then add:
•1/2 cup almond milk
•1/2 mashed banana
•1/4 cup pumpkin
•3 T liquid egg whites
Mix that together and microwave another minute.
Then add:
•1 T coconut flour and 1/2 tsp cinnamon
Mix well and transfer to a sprayed deep ramekin. I was surprised of how much volume the batter had! Cut up more of the banana and place on top.
Bake at 375 F for 30 minutes.
For best results, top with a generous amount of your favorite nut butter and enjoy! 👌
